Soya Bhurji

Soy-Bhurjiingredients
Soya nuggets: 100gms
Water to soak nuggets
Vinegar 1tsp
Salt: to taste
Black pepper powder: ¼ tsp
Olive oil: 1 tsp
Vegetables chopped: Spring Onions, tomatoes: 1 cup
Cumin seeds (jeera): 1 tsp
Amchur: 1 tsp
Chaat masala: 1 tsp.

Soak nuggets in water with vinegar added to it for ½ hour and drain. Mix together the nuggets salt, black pepper and keep aside
Heat a tsp of olive oil in a nonstick pan, add cumin seeds, when the seeds start to crackle, add onions, and add tomatoes after the onions are brown. Now add nuggets and stir fry for 3-4 min. Add amchur and chaat masala. Remove from heat. Garnish with chopped coriander.
