Egg white: 2
Salt: to taste
Black pepper powder: ¼ tsp
Water: 2 tbs
Olive oil: 1 tsp
Spring Onions (chopped): 4 tbs
Spinach (chopped)
Green chili (chopped): taste.
Beat egg white, salt, black pepper, and water till thick and foamy. Heat Olive oil in a non stick pan. Pour the egg mixture into it and stir. Add chopped palak, chopped spring onions and green chilies till it is set evenly. Fold from one edge towards the other with a flat spatula.
Turn around to make sure it is almost cooked, and transfer to a serving plate and serve.
A rich source of protein (egg white) and iron (spinach. It is low in calories being devoid of egg yolk. A good breakfast, to keep you full longer and prevent you from snacking high fat food later in the day.
