Mushroom Soup

ingredients
200- 250 gms button mushrooms- cut and cubed
1 medium sized onion- finely chopped
1 medium sized potato-cut and cubed
2-3 garlic cloves – finely chopped
1 tsp olive oil
1 bay leaf
1/2 cup water
1 cup fat free milk
1 tso chia seeds
salt and pepper to taste

Heat oil in pain, add bay leaf, onion and garlic and sauté till brown. Add cubed mushroom and potatoes and sauté till mushrooms start to release water and are light brown. Add salt, black pepper and water and bring to boil till potatoes are cooked. Cool and blend the mixture for 3 seconds , so that some mushroom pieces are still intact. Add the blended mixture to pan and bring to boil. Add 1 cup milk while constantly stirring it. Garnish with freshly crushed black pepper and serve hot. Remove the bay leaf before blending
