4 medium sized carrots – cut and cubed
2 medium size tomatoes-cut and cubed
2-3 cloves garlic – finely chopped
1 medium sized onion- finely chopped
1 bay leaf
1 tsp Olive oil
salt and black pepper to taste
1 tsp chia seeds
Heat 1 tsp olive oil in a pressure cooker. Saute bay leaf, onion and garlic till they turn brown. Add salt, pepper, carrots and tomato, and 2 cups water. Pressure cook for 10 min. Cool and blend the mixture. Boil the blended mixture and add chia seeds. Garnish with lemon rind and black pepper. Remove the bay leaf before blending
This low fat soup is ideal meal for weight watchers in winters. Carrots are rich in phytonutrients, caritenoids, Pottasium, alkaline elements and fiber. Carrots are high in soluble fiber, which may reduce cholesterol by binding the LDL form (the kind we don’t want) and increasing the HDL form (the kind our body needs) to help reduce blood clots and prevent heart disease.
