American corn: 250gms
Onions: finely chopped: 1
Lemon: 1 squeezed
Red capsicum: 1 finely chopped
Yellow capsicum: 1 finely chopped
Green coriander: 3 tbs
Salt: 1 tsp
Ginger: 1 tsp
Green chili: 1tsp
Boil American corn in water, strain and keep aside. Mix finely chopped onion, green chili, ginger, put capsicums and mix well. Put salt and lemon juice over it .The salad is ready to eat.
Corn in high in carbohydrates and fiber. It keeps you full for long and gives instant energy and thus prevents you from overeating and munching on sugary snacks. Ideal for snacking for weight watchers. Diabetics should avoid this as corn has high glycemic index. Adding raw vegetables improves the nutritive value of the salad.
