4 medium size carrots: chopped
Almonds 12-15
Olive oil 2 tsp
Green onions: (1-2) chopped
Onion: (1) chopped
Black pepper: to taste
Breadcrumbs: 2 tbs
Salt: to taste.
Heat olive oil in a pan. Add Chopped carrots, onions and 10 almonds and sauté. Now add salt, black pepper and bread crumbs. Add 4 cup water and boil. Strain the mixture. Blend the vegetables in a blender to make a puree. Now reheat the strained water and add vegetable puree to it. Cook on medium heat for about 5 minutes. Garnish with sliced almonds and serve hot.
Soup is rich source of iron and omega 3 fatty acids. It is rich in fiber. An ideal soup for anemic individuals, and weight watchers.
